Peanut Butter Tofu Ramen

Craving a cozy, soul-warming bowl of magic?
This Peanut Butter Tofu Ramen is everything: creamy, savoury, nourishing, and fully plant-based. With kitchen staples like garlic, ginger, soy sauce, and a swirl of peanut butter, this broth casts a seriously craveable spell.
Topped with crispy tofu (see my go-to method linked below) and your favourite ramen noodles, it's the kind of meal that comforts you from the inside out

This recipe comes together in under 30 minutes, making it perfect for weeknights when you need something quick, grounding, and absolutely enchanting.
Ingredients (Serves 2–3):
2 tbsp peanut butter (or PBfit powder reconstituted with water)
1 tin light coconut milk
2–3 garlic cloves, peeled
1 thumb sized piece fresh ginger, peeled
2 tbsp soy sauce (or to taste)
Pinch of chili flakes (optional, for gentle heat)
250ml vegetable stock
150–200g ramen noodles

Optional toppings:
Chopped spring onions/ chives
Sesame seeds
Lime wedges
Steamed greens (bok choy, spinach)
Shredded carrots, sliced cucumber, or bean sprouts
Chilli oil or sriracha
Method
Prepared the tofu (see linked recipe)
In a high-powered blender, combine the peanut butter, coconut milk, garlic, ginger, soy sauce, and chili flakes. Blend until completely smooth.
Pour the blended mixture into a saucepan, add the vegetable stock and stir to combine.
Bring to a gentle simmer over medium heat.
Once the broth is simmering, add the ramen noodles directly into the pot. Cook according to package instructions (usually 4–5 minutes), stirring occasionally to separate noodles and avoid sticking.
Transfer the noodles into bowls, and ladle the the broth over.
Top with crispy tofu and your favourite garnishes.
